Tonka beans are the seeds of a rainforest tree called the Dipteryx odorata (Try saying that 10 times fast) which is native to South America. They are black and wrinkled and have a smooth, brown interior with a lovely sweet aroma reminiscent of vanilla and cinnamon, which as we all know works amazingly in beer!
